Recipe: 2 Ingredient Healthy Pancakes

I’ve been keeping up with regular workouts and it has inspired me to really step up my game in terms of diet. I don’t have really bad eating habits but there’s definitely room for improvement.

I woke up this morning craving something sweet and remembered a recipe I recently found online about how to make healthier pancakes….and you only needed a few ingredients. Unfortunately I cannot remember the first source of the recipe but it’s the easiest dish I’ve ever made.

The recipe I originally found calls for 2 eggs and 1 banana….after doing tons of research (which is why I can’t remember where I first found the recipe), I noticed most people were able to create the pancakes with no problem. There were a few who complained that they came out too “eggy” or like super thin omelet. So to make them a little fluffier as well as for flavor and health, I added protein powder.

Here’s the recipe:

Ingredients

2 Bananas

4 Eggs

1 Scoop Vanilla Whey Protein Powder

Dash of cinnamon

Canola Oil

Frozen berries

 

Directions

Add bananas, eggs, protein powder and cinnamon to food processor, blend VERY well. Per some of the comments, making sure the banana is completely blended is the key to a good consistency. Set your heat on low medium. Spray pan with Canola Oil and pour disc the same as you would normal pancakes. I would advise not making them too big because this texture is not as “sturdy” as normal pancakes and they can easily break. With normal pancakes you will notice bubbles when it’s time to flip; with these they’ll just get a little opaque around the edges when it’s time to flip. Makes 8 pancakes.

Heat frozen berries in microwave or in saucepan and pour over top.

Now, to be honest these are not going to taste EXACTLY like pancakes but they are very good and healthier for you. What are some other healthy alternative receipes?

 

Manicure Monday: Pronto Purple

It’s Monday and that means it’s back to work mode, which for me is quite hectic and a bit daunting. I recently decided to try and create positive associations with things that I don’t necessarily look forward to….like a jam-packed schedule.

So to combat my Monday blues, I gave myself a nice manicure on Sunday evening because I absolutely LOVE when my nails are done. There’s something about perfectly polished nails tapping on a keyboard that just makes it a bit easier to get work done. A good mani is also a quick and inexpensive way to “accessorize” your look.

This week I’m rocking Purple Pronto by Sally Hansen Insta-Dri. I’ve blogged about this brand of polish before and I still highly recommend it for those who don’t have time to wait for polish to dry. Because it is a quick dry polish you have to be fairly quick with the application. This is also a “less is more” polish. I topped the mani off with the Sally Hansen Insta-Dri Top Coat which leaves a great shine. I know the line is available at Target and I’m sure it’s also available at most other drug stores.

Getting Organized: Customizable Notebook

Anyone who knows me, know that I am ALWAYS here for a fabulous notebook. While I do the majority of my organizing electronically, I still keep a notebook nearby to quickly jot down ideas.

This past weekend I was searching for a new mouse for my laptop and I came across an ad for the Martha Stewart Discbound Notebook Collection at Staples.

I have collected several notebooks over the years but none of them have really encompassed all the organization I need. It seemed they were either straight journal style with nothing but empty pages to fill or they were completely planner style with not enough blank lined notebook paper. After a bit of investigation, I found that this notebook is a great hybrid!

What makes this notebook different from others? Well for starters it’s completely customizable and allows you to add, remove and rearrange pages…and I don’t mean tear them out and have those annoying little pieces of paper falling all over the place. The paper is definitely secure but the holes are not complete…not sure if that makes sense so here’s a photo:

Wedding Countdown: Bride Inspiration

Engaged nearly 6 months, with a little more than 3 months until the big day, I’m knee deep in wedding planning and I have to say this has been a phenomenal experience so far. We’ve been fortunate enough to have a wonderful planner, Mr. Scoobie West, and he’s made the process super smooth.

I was able to settle on what I wanted rather quickly and the first decision was the wedding colors: Champagne, Ivory and Blush. I purchased my dress 6 days after being engaged, we had our guest list completed by day 8 and we were able to lock in most of our other vendors within 45 days. The goal was to decide on major stuff before the holidays so we wouldn’t be frazzled come the new year.

So I wanted to share some the pics I pulled for inspiration during the planning process.

Christmas Haul 2013

I know I’m suuuuuuper late but in an effort to stay committed to blogging, I’m putting out my Christmas Haul….in January.

This holiday season I wanted to focus on replenishing wardrobe staples and I was in desperate need of sweaters so I racked up. And I was lucky enough to get some unexpected extras!

Banana Republic Zip-Back Pullover $49:  I’ve decided to start buying pieces I really love in more than one color…and I started with this. The light gray heather has a pink contrasting exposed back zipper and the fire coral has a yellow exposed zipper. I chose the lighter colors to add a bright spot to this dreadful winter weather and to remind myself that spring soon come. This sweater makes a great transition piece as well!

Gap Cable Knit Pullover:  Because it is indeed still winter, I needed something a bit more heavy duty so I opted for a couple of classic cable knit sweaters. I selected basic colors Snow Cap ($35) and Navy ($29) to mix and match with some of my fav skinny jeans.

Old Navy Honeycomb-Stitch Infinity Scarf $18:  I have wanted an infinity scarf for YEARS but was never willing to pay the $30 price tag I would always see, so I waited. As described the stitch is like a honeycomb but the best part is how soft it is; some scarves are so thick and tightly woven that they irritate my neck. Not this one! Although a great price online at $18, Old Navy is actually having a sale in-store on cold weather accessories so I got this scarf for 9 bucks.

Leslie Danzis Necklace:  One of my very good friends (and our awesome wedding planner) Scoobie West got this necklace for me because he knows how much I LOVE statement pieces. The blue is exactly what I needed in my wardrobe. He purchased it off Gilt so unfortunately it’s no longer available but you can find a similar style here.

MICHAEL Michael Kors Large Hamilton Saffiano Tote $358:  This was a gift from my wonderful and loving fiancé. I’ve gushed over this bag for over a year and he surprised me with it for Christmas! This bag is everything I imagined it would be: gorgeous and classy. It has tons of compartments, which will keep me organized and it’s super sturdy. It’s actually big enough to carry the majority of my work stuff: iPad, notebooks, wallet, ballet flats (if I’m in transit on foot), water bottle and cosmetic pouch.

I had a very lovely Christmas but I’m most thankful for great family and friends.

Although I rarely do it, because of my super hectic schedule, I actually enjoy cooking. A few years ago I went through a “Food Network” phase where I was obsessed with Giada  and Barefoot Contessa. I would watch their shows and jot down the recipes as quickly as I could to recreate later. I’ve been a pescatarian for 7 years so almost any dish I saw that called for meat, I would try it with either fish or meat substitute (my favorite brand for that is MorningstarFarms).

One of the first recipes I tried was Chicken stuffed with Goat Cheese and Sun-Dried Tomatoes from an episode of Barefoot Contessa. After watching the episode I was certain I could recreate with Salmon because it’s a “sturdier” fish as opposed to tilapia or a similar “flaky” fish.

Ina’s recipe called for stuffing under the skin of the chicken breast so I decided to cut a slit down the side of the salmon to create a pocket.

Ingredients

4 4oz. cuts of salmon, skinless

2 tbsp pr piece of crumbled garlic-and-herb feta cheese

1 1/2  pr piece of sun-dried tomatoes halves

1 lg fresh basil leaf pr piece

Good olive oil

Montreal Chicken Seasoning

Directions

Preheat the oven to 375 degrees F.

Line cookie sheet with foil; spray with olive oil. Place the salmon on a sheet pan. Cut a slit about 3inch long and deep enough to get a good stuffing but not too deep to cut all the way through. Season both sides of salmon with Montreal Chicken Seasoning (or whatever seasoning you prefer). Stuff basil leaf flat so it’s sort a like a liner and won’t bunch when adding other ingredients. Next add feta cheese. Then add sun-dried tomato on top. Drizzle salmon with olive oil and bake for 12-15 min at 375 degrees F.

Fashion Finds: New Workout Clothes Haul

Although I’m no stranger to working out, I have certainly “fell off” and with my wedding only 4 months away I’m even more motivated to get back in the gym and work out. I’ve come to realize that I am definitely more motivated to do just about anything when I’m dressed in appropriate, cute attire so I decided I would purchase some basics to get me started. I also implemented an incentive, which allows me to purchase a new fitness item for every 8 weeks I attend the gym on a steady schedule. First incentive item will be the Nike Free 5.0 Running Shoe and if I’m a good girl, I’ll have these babies by my birthday, Feb 26th…wish me luck!

Women’s Active by Old Navy Compression Capris $23: ALL of my current workout attire is mostly black so I got 2 pair of these, one in Raspberry Punch and the other in Carbon 3. I REALLY like the elasticized waistband that comes up just over that little pouch. There’s also a hidden coin pocket and it’s a quick-drying fabric, which is certainly ideal (no sweat stains). Great buy!

Women’s Active by Old Navy Jackets $35: Made of the same fabric as the Capri pants, this jacket is ideal for coming and going and the fabric won’t chafe. It’s a great fit and it also has 2 zippered pockets and little thumbholes to keep your hands warm. I got this one in Carbon 2.

Women’s Active by Old Navy GoDRY Graphic Tanks $15: Typically I like the very fitted workout tank tops but because it’s been quite some time since I’ve been to the gym (sucks in belly), I decided to get a couple of loose fitting tops. I got two of these tanks, one in Light Gray (Live. Learn. Burn.) and one in Carbon (Be Happy. Be Bright. Be You.).

4pk Multi Color Socks $7: Not sure why these aren’t on the Old Navy website but they should be. All of my current workout socks are black and I decided to get colorful socks to spruce things up a bit…it’s the little things!

Under Armour Men’s ColdGear Combine Training Tech Gloves $35: One of the most important items I purchased was a new pair of workout gloves. My current gloves are completely split open between the thumb and index finger…which is kind of cool because I’ve been able to slip my index finger out and keep up with my workout on my iPhone but not really cool cause they look a hot mess. I chose these gloves because they have the touchscreen fingertips and because they have the no-slip grip pattern. I got these in Black/Solar.

So here’s to a New Year…and hopefully a New FIT ME :-)
